Noon Chai (also called Kashmiri tea, Pink tea or Sheer Chai) is a traditional tea beverage from Kashmir. "Noon" is a local word for salt. Noon chai is made from special tea leaves, milk, salt, pistachios, almonds. Cinnamon is sometimes also added for flavor. A pinch of baking soda is addeto help give it more of a pronounced pink color. It is consuming Kashmir twice a day, in the morning and evening. Kashmiri Noon Chai is the famous Pink Tea from Kashmir. However, this tea is not sweet in its flavor. It is sweet- salt to taste different from other varieties of teas available in India.
INSTRUCTIONS
- Pour 2 cups water, green tea leaves, crushed cardamom and baking soda in a pan.
- Add the tea leaves into the water and steep it well.
- Let the tea mixture steep well and boil on medium heat until the water is reduced to half. It would take about 18-20 minutes.
- Turn off the heat and add 2 cups of cold water. Adding ice-cold water helps in holding the strong pink color.
- Shake it vigorously again with a ladle for 1 minute.
- Turn on the heat and let it boil again for 10 minutes on medium heat.
- Add sugar and salt or only salt or only sugar. Let it boil again. (Traditionally only salt is used)
- Boil for about 10 minutes. The more you boil this tea, the stronger, rich and creamier the tea will be.
- Strain the tea into cups and add sliced almonds or crushed dry fruits.
